Grilled Eggplant with Himalayan salt

Ingredients

  • 2 Tablespoons Himalayan Salt
  • 3 medium eggplants
  • 1/3 cup olive oil

Preparation:

In a cup of warm water dissolve the Himalayan salt, and mix with 3 quarts of cold water in a larger bowl. Set it aside.  Then, cut the eggplant into ¾-inch thick diagonal slices and leave them to soak in salt water solution for half an hour.

Then, drain the eggplant and pat dry with paper towels, and place them on a tray. Brush one side with the oil, sprinkle some salt and pay them on the grill. Grill them for 5 minutes, with the lid closed.

Brush the top with the olive oil, sprinkle with salt again, turn the slices over, and grill for a few more minutes.

Ingredients

  • 3 oz. Himalayan salt
  • 3 oz. sugar
  • A tablespoon of lemon zest (grated)
  • 1 gallon of water

Preparation

Boil the water, and add the ingredients. Simmer until the salt is completely dissolved. Then, leave it to cool down for about 6 hours. Afterward, soak the poultry or port in the brine for 6-8 hours, chill it in the fridge for a few hours, and roast it!

Watermelon and Feta on a Salt Block

Ingredients

  • 1 (8 by 12 by 2-inch) salt block platter, or 2 smaller blocks
  • 4 (½-inch-thick) quarter slices of a large watermelon, without the rinds
  • 3 ounces feta, crumbled
  • 6 fresh mint leaves

Preparation:

Leave the salt block platter in the refrigerator for at least a few hours. Then, arrange the watermelon slices on it, slightly overlapping. Next, just scatter the feta over them. Do the same with the mint leaves.

Leave the dish to stand for 20 minutes before serving.
